Add flour onto the counter and mash the cooked potatoes directly onto it. 3. Create a well in the center of the mashed potatoes and add 1 whole egg and 1 egg yolk (if using). 4. Add salt and crack the eggs (if not already cracked). 5. Incorporate flour and knead the mixture until it is smooth and uniform, working as quickly as possible. 6.
